Tuna melt toasties

Tuna melt toasties

For us hungry market gardeners, nothing much beats a tuna melt toasty for lunch ... savory creamy tuna salad with dill, oozy cheese and crunchy toasted sourdough bread. Working from home, it's easy to eat quick and get back to work. But we've learned over the years to eat a good protein filled lunch and have a rest ... it helps us to have energy further into the afternoon.

Ingredients to make 3-4 toasties:
Tuna in spring water 185-200g tin, drained
2 Tbsp red onion finely diced
2 Tbsp green olives pitted and finely diced
2 Tbsp mayo
1 Tbsp olive oil
1 Tbsp finely chopped Salty River Farm dill
1 tsp lemon juice
Salt and pepper to taste

6-8 Sourdough bread slices spread with butter or olive oil spread
6-8 Slices of good melting cheese (like cheddar)

Method:
In a bowl combine tuna, onion, olives, mayo, olive oil, lemon juice and season to taste. Use a fork to flake up tuna.

Butter the bread. Assemble the toasties in the toasty maker or frypan: bread (butter side down), cheese, a big spoonful of the tuna mixture, a 2nd cheese slice and finally bread on top (butter side up). Cook until golden brown and cheese oozy. Yum!
